From Mexico to Vietnam via Lebanon, the world-famous chef Alain Ducasse, holder of three Michelin stars for three different restaurants, has just opened a fusion cuisine concept offering flavours from all over the world, here in the heart of the 2nd arrondissement of Paris. Here, small wooden tables lit by ceiling-mounted lights come together in a cosy, almost secretive atmosphere, punctuated by a few orange and cobalt-blue seats. Some customers prefer to lean at the restaurant counter, taking their time to enjoy a carefully chosen glass of wine.

Mumbai prawns, taameyya from Cairo, cuttlefish from Sanaa, dürüm from Istanbul, meagre from Damas…these are just some of the ingredients in the dishes from the four corners of the globe that Alain Ducasse has developed. Depart from Constantinople with your starter, travel through Rajasthan for your main course and then set off for Khor al Adaid, in the south-eastern peninsula of Qatar, by ordering a pear with walnuts, lemon and incense. Here more than ever, the cuisine will transport you in every sense.
