After a string of gourmet adventures around the world, chef Simon Horwitz returns to Paris with a cuisine that exudes authenticity.

Paris' République neighbourhood is now home to a chef whose CV reads like an ode to travel. Chef Simon Horwitz certainly has had plenty of adventures before launching his own spot in the capital. After having had a hand in the rise of several Parisian establishments, Horwitz then set out to discover new culinary cultural horizons, mostly in Southeast Asia and Australia, and in Japan and in South America, where he became a devotee of the warmth and togetherness of communal dining and sharing plates.

Back in Paris, this wandering chef is clearly inspired by the techniques he picked up during his many travels. His masterpiece? Rotisserie. The crunchy skins, shining with juice, are served over raw ceramic plates from Lima, and as a matter of fact, it was Simon's last stop on his gastronomic journey. Seated at long wooden tables, two can share the delicious lamb shoulder with lait de Provence. Poultry lovers will delight over the braised Pornic pigeon, accompanied by Jerusalem artichokes and button mushrooms - that is, unless they let themselves be tempted by the salted pollack, served with nettle, carrots, and romanesco cabbage. French terroir mixed with foreign influences and authentic products are the colours that best paint the portrait of Elmer.
