Young, handsome, and Michelin-starred chef José Avillez is reinventing and elevating traditional Portuguese cuisine.

After highly acclaimed stints with Eric Frechon at Le Bristol Paris and star Spanish chef Ferran Adrià, José Avillez took over Belcanto on the Largo de São Carlos in the historic Baixa district in 2011. His forte is Portuguese gastronomy reinvented and modernised by molecular techniques. But nothing is overplayed. The two cosy rooms overlook the kitchen. Each dish is a gustatory journey you will not soon forget, starting with the exotically named amuse-bouches: Ginginha Abbey, Olive XL-LX, Lupin ... A choice of " Evolução " and " Belcanto " menus follows. Emphasis is on using seasonal ingredients, most often paired with classic elements like sea bass and alfonsino. Avillez is most definitely a name you have not heard the last of!
